When you build a tone with your FM-9. Should I pick a good cab first and then thumbtack through the amps or visa versa ? Is there a way to know which cabs work best with which amps without going through everyone of them ?

Yes.

I typically will pic an amp first, then find a cab that works with it.

There's no real rule. Just avoid clipping. Usually I try to run the levels on all connections as hot as possible to avoid having to boost signals on any input which would introduce additional noise. Then adjust the volume at the end which is would be my active monitor, However, using the AX8 volume knob is a lot more convenient then having to reach around the monitor to get access to its volume know.
