The Control Center software for uNo chip with FCB-1010 has this. I think the editor for Gordius Little Giant controllers (same creator) did as well.

For midi, that was very useful to see what was being sent when a button was pressed.

However, the FCs aren't midi so I'm not sure what would be gained? Unless it was testing switch functions?

That would certainly be handy in some situations where it’s ok to use your hands for remote control. For development purposes, an app like this might already exist at Fractal Audio.

What would this do?

The exact same thing an FC would do, only virtually on-screen. (Not everyone has feet!) My laptop PC is touch-screen; I'd use it to "point & select"
