Turn the gain down until it noticeably thins or weakens the tone you're going for. Then turn it back up a notch.

As stated above, this is a good tactic. I also fat palm a chord, allowing it to continue, not fully mute it and let it ring out. Listen to how fat or thin that continuance of the chord sounds, this is called bloom. I like to choke it back to just the point of still being slightly full, but not fat.

I’ll ask a dumb question: how do I determine when there’s too much gain? When I can turn it down and it is audibly similar?

When everything smears together and you cant hear the pick attack.
