EV-1 and Ultra

Bought myself an used EV-1. What's the difference between using Expression (stereo Jack) and input/output connection? Just because I didn't have the cable I just use stereo Jack split in 2 for the connection to MCF pedal input 1 and input/output on the EV-1. This has worked out on an old volume pedal I have.

I have set the pedal input 1 on the MCF to global input volume. Can I on chosen presets use the pedal to control other parameters as an exception?
 
EV1 volume in/out ports would be a different type of pot/sweep (logarithmic) than the expression port (linear).

It's possible to override the global pedal assignment per preset, on the MFC.
