Dumb question for Mix IRs

They aren't necessarily better. Depends on what you're looking for or what you're use for them will be.

My understanding is that a "mix" IR was created using 2 or mics at the same time. This gives a more immediate "studio" type tone as most guitar tones tracked in the studio are recorded with more than 1 mic.

It's really up to you. Do you want the mix of mics done for you or would you rather pick a more "traditional" IR (1 mic) and blend them yourself using stereo cabs, dual cabs, etc.?
 
Ultimately, there are some guys who will never use anything more than an SM57 on their cabs, and they get the tone they are after. I keep it pretty simple, usually sticking to a SM57 and a R121 blended in a program like Axe-O-Matic DSP or MixIR2, bounce that to a .syx file and load it as a mono block. Then I'm getting the tone I like in the efficient package that fractal provides me. Can't wait until the hi-res IR capability!
