It is unclear to me just how much polyphonic pitch detection is going on with these various devices vs simply being able to process a polyphonic signal.
Something like the Polytune doesn’t really count because it is looking for very specific frequencies only. If your strings are pretty far out of tune it isn’t even close to accurate.
As for the SY-300 and the EHX POG and 9 series pedals, they just have to be able to process these notes without making a mess of things, they don’t actually have to determine the actual pitches to do their job. This is a significant difference and quite a simplifying one. One of the ways you can tell this is to pay attention to what happens to sustaining notes in a chord when you trigger another note. Often stuff gets cutoff that you wouldn’t expect.
Things like the MIDI Guitar app don’t work with pitch bend because they’d need to know which string caussd the bend so they could send the bend information to the correct MIDI channel.
