I also just bought a Road Runner RKPRC2 (2U) because I am about to travel internationally and just wanted to take the AxeFX II as a carry-on in the plane.

I like the look of that case. Would the MFC fit in that pocket with a couple of cables?

Or does anyone have a specific model of a 2U rack bag they could recommend for the Axe FX II in which you could fit the following in the pocket: MFC-101, power lead, guitar lead, cat5 cable?

No, the MFC won't fit in that pocket. Only the cables and maybe a 14" laptop.
