They would have to build or recommend one brand and model of midi over Bluetooth device.

Kemper have their own iOS app but the Kemper stage had a wifi module built in.

But I totally want that too

USB/USB-C cable it is enough
I use it frequently with iPad pro to reproduce my backing tracks

You can do that with the MacOS Sidecar feature nowdays. Not sure if Luna or Duet offer any advantage over that.

I use my iPad Pro 2017 12.9" model as another display for work. Got some terminals, Slack/Teams/email etc open on it.

The bad part of the Sidecar feature is that you need to use the Apple Pencil if you want to use the screen effectively. Otherwise you can't do much more than scroll so it's not exactly going to work for using Axe-Edit with a touchscreen.

Correct, but it doesn't work with all MacBooks. And Luna is very very fast.

There is "FracPad" from @AlGrenadine for this. It's not the same as Fractals editors but it works pretty well, and In the absence of Fractal making an IOS editor, it is great to have something on IOS for live editing.
