Can someone please tell me - Which pin is hot on the XLR output connectors?

Exactly - otherwise you null the balanced signal that IS phase-reversed for the purpose.

The one with the soldering iron it. :)

But yes, I always call it hot even though it's not. I remember it like this

2's hot, 3's not and 1's ground, lift at the source and ground at the destination.

:) You're one of those guys huh? Technically aren't they 180° out of phase? Not phase shifted, but opposite since as one increases the other decreases at the exact same rate?
 
Technically is it polarity. I forgot why but I'm sure this discussion will blow up and show us why again :)

Not at all.
Phase shift means one signal is delayed from the other, at a specific frequency. Polarity and Phase have nothing to do with each other, really.
But don't sweat it too much, most people get it wrong, including large audio manufacturers' silkscreening departments. :)
Because it's so often specified incorrectly, everyone knows what is "meant". Kinda like how everyone on the internet spells "lose" as "loose". :mrgreen
