If I take a UR cab and the put a Tone Match after it, I think I can then combine the 2 of these in Cab Lab to create a singe cab which includes the Tone Match.... but, will the addition of the tone match make the "new" cab non-UR?

In other words will the newly created cab with the tone match remain an Ultra Res cab?
 
It depends. If a tone match is done in 'live' mode, it can be exported as ultrares. If it is not done in live mode, the exported IR will be shorter. Now I haven't tried cab lab myself but assuming it can mix IRs of various lengths, you should be able to mix it regardless of whether the tone match export is ultrares or not. If it sounds good, who cares?
