Tone match my own amps

Is it pretty easy to run my amp into the axe-fx (or ax8) micing up through a good preamp and capture that sound as an IR or something and use that as an amp block?

With the Axe-Fx II, yes. The AX-8 does not have this capability.

Tone matches do not capture the non-linear characteristics of a source like distortion and compression. It will only capture the frequency response or static EQ curve of the source. You will still need to use an amp block to create the base tone of the amp. You can then use the tone match to further fine tune the frequency response.
