Is it possible to set each single L and R Output to it's own independent source?

Nope.

It's been a while since I've been using this scheme, but I seem to remember it was working as intended: In this preset, Out2 L is "almost" a copy of Out1 (bypassing the enhancer) and Out2 R is a copy of the input.

Yep, it was a bit of work copying the connections to the 12-14 presets I used live.
