Gated feel when the gate is off

Hi all, I'll try to explain this as well as I can. I

'm using a Plexi model and I hate noise gates. I'm a strat player and I use my volume on the actual guitar a ton. I roll it off for clean tones and less gain. I have been noticing what almost sounds like digital distortion or some type of gate at low guitar knob volume. The input gate is disabled or at least all the way off. I have zero gate blocks. Does anyone have any suggestions at all? It almost sounds as if it can't reproduce the samples at a low volume. I thought maybe it was my strat but it does it on both strats I own. Any help or suggestions is greatly appreciated.

I believe there is a global noise gate offset. That could be affecting things. Otherwise, maybe if you posted an audio sample someone could help determine the problem.
