Unfortunately the key block for this sound is the cab block, which the FX8 doesn't have...

You can do that. It won't be the same as a real 12-string (can't simulate both unison and octave turnings), and it won't sound like an acoustic, but it could give you something useful.

You might contact @Moke about his 12 string pitch block. You could even buy the AxeFx II preset then look at it with Fractool and copy the pitch block settings.
