    Yea this can be done. You would need a separate preset for each song with parts 1 2 and 3 laid out in scenes You can hook up the iPad or phone via midi to the fm3 and by selecting the song in BandHelper it will change the preset on the FM3

    All my presets are stereo and when I have the option to run stereo I do it that way and when I have to run mono I use the left side only. Sounds fine to me. (I do not have my cabs panned at all)
