    @5:11 he shows his method. Up strokes as you move to higher string, down as you move to lower strings. An older Paul Gilbert told me that he doesn't always pick every note. He does on the recordings, but live the first two notes of a three note per string run will do.

    What about other amp models? Have you reset the amp block? If you are just getting the raw sound of your guitar (i.e., the same as if you went input->output with no other blocks) it sounds like the amp block is being bypassed. I don't recall if the ax8 has a bypass mode for the amp block...

    So it's not bad power, it's ambient EMI. Solution is to face the least noisy way or build a faraday cage. Edit: you could also try to shield the pickups - copper tape wrapped around / behind them.

    If you don't have those plugins: Collapsing it to mono may remove a bunch if it is a stereo reverb. Gating the vocal tightly could help remove the tails. A note to the singer may get you a dry track.

    I would use two compressors in series. The first set as a limiter to knock down peaks, targeting 3-6 dB reduction. Could be any type really, maybe pick a cheap one. I'd look at an Optical (LA-2A style) for the second one to even things out.
