    You could probably get around that by using the looper to play some riffs while you're adjusting the IR's in Cab Lab. Latency could be a driver setting issue, assuming it doesn't have latency issues in your DAW as well.

    I remember a while back seeing a comparison video between the II and the III where they used identical settings for each amp model and the III had more gain in every case. I'll try and find the video, but I'm pretty sure that more gain in the Ares firmware is intentional and probably more accurate.

    The issue is that the metering is different with the Output Comp in the amp block than how the Compressor block shows it. They're both showing gain reduction, just that the Output Comp's meter is way harder to interpret. I'll probably just make a video about it after work.
