[BUG?] Selecting Axe FX 3 as audio output on Mac OS 11.2.3 hangs several software packages (Guitar Pro, Youtube...)

Have you tried force closing Guitar Pro and then re-opening it while the Axe-Fx remains the selected audio device? Of course I can't go back and check how this has worked in the past, but my recollection is that Guitar Pro has always crapped out like this. It doesn't like the sample rate being...

Clip of IR through tube amps?

I was going to add something like the above. I'm sure you could find IRs that made a minimal impact on the sound of the Amp block. Or maybe you like the sound of that heavily affected tone. It's all about what you're hearing in your head.

I don't have a clip. Sorry. I can only try to describe what I heard when I forgot to disable Cab Modeling once when using my tube power amp (Fryette LXII) with the Axe-Fx III. It just didn't sound like a guitar amp plugged into a cab in a room. It sounded like if you had mic'd up a guitar cab...

This happens to me fairly frequently. Nearly every time I install a FW update (and I typically download and install each new one... the only ones I've skipped are beta releases), it sounds awful. Then I re-install the same firmware and it sounds great again. No idea why. I hope its not a sign...

I tried this method last night and I thought the sound was pretty crappy. I'm not sure if that's just because I didn't follow it correctly or because a guitar tone for recording will not sound as "full" as a "bedroom guitar" (from the video) sound. I hope its the latter. I didn't get a chance...

If you recorded a DI of the performance, you could just re-amp. This really depends though. Even from song to song, you may make slightly different mix moves to make the guitars sound how you want them to in context of that song. So maybe the question shouldn't be how to make the guitars sound...
